½ onion (sliced)

Rice Base

1 cup cooked rice (white or brown)
Tzatziki Sauce

½ cup Greek yogurt

½ cucumber (grated & squeezed)

1 tbsp lemon juice
-
1 tbsp olive oil
-
1 clove garlic (minced)
-
1 tbsp fresh dill (or coriander)
-
Salt to taste
Mix everything until creamy.
👨🍳 Step-by-Step Instructions
1️⃣ Cook the Rice
Cook rice according to package instructions and keep aside.
2️⃣ Season the Chicken
In a bowl mix chicken with:

olive oil

paprika
-
oregano
-
cumin
-
garlic powder
-
salt & pepper
Toss well.
3️⃣ Cook the Chicken
Heat a pan on medium-high heat.
Cook chicken for 6–8 minutes until:

golden outside

fully cooked inside
4️⃣ Cook the Veggies
In the same pan:

add olive oil

sauté onions + bell peppers
Cook for 4–5 minutes until slightly soft but still crunchy.
5️⃣ Make Tzatziki
Mix:

Greek yogurt

grated cucumber
-
lemon juice
-
garlic
-
olive oil
-
dill + salt
Keep chilled for best taste.
6️⃣ Assemble the Bowl
In a bowl add:

Cooked chicken
-
Sautéed veggies
7️⃣ Add Sauce
Top with a generous amount of tzatziki sauce.
8️⃣ Serve
