Creamy Poblano Pasta with Shrimp (High-Protein Recipe)

Ingredients

For the Shrimp

  • 250 g (½ lb) large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp garlic powder


For the Pasta

  • 200 g fettuccine / linguine / spaghetti pasta

  • Water for boiling

  • ½ tsp salt


For the Creamy Poblano Sauce

  • 2 poblano peppers

  • 3 garlic cloves

  • ½ onion

  • 1 tbsp olive oil

  • ½ cup Greek yogurt (for a healthier creamy base)

  • ¼ cup cream cheese (optional but adds richness)

  • ¼ cup grated Parmesan cheese

  • ½ cup reserved pasta water

  • Salt to taste

  • Black pepper to taste


For Garnish

  • Extra Parmesan cheese

  • Fresh parsley (or cilantro), chopped


Step-by-Step Directions

1. Roast the Poblano Peppers

  1. Roast the poblano peppers over a gas flame, grill, or in the oven.

  2. Roast until the skin becomes black and blistered.

  3. Place them in a bowl and cover for 10 minutes.

  4. Peel off the skin and remove the seeds.


2. Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Add pasta and cook according to package instructions (8–10 minutes).

  3. Before draining, reserve ½ cup pasta water.

  4. Drain the pasta and set aside.


3. Cook the Shrimp

  1. Heat olive oil in a pan over medium heat.

  2. Season shrimp with:

    • salt

    • black pepper

    • paprika

    • garlic powder

  3. Cook shrimp 2–3 minutes per side until pink.

  4. Remove from the pan and set aside.

⚠ Do not overcook the shrimp or they will become rubbery.


4. Make the Poblano Cream Sauce

  1. Heat 1 tbsp olive oil in a pan.

  2. Sauté onion and garlic for about 2–3 minutes until fragrant.

  3. Add the roasted poblano peppers.

  4. Transfer everything to a blender.

Add to the blender:

  • Greek yogurt

  • Cream cheese

  • Parmesan cheese

  • Salt and pepper

Blend until the sauce becomes smooth and creamy.


5. Combine the Pasta and Sauce

  1. Pour the poblano sauce into a pan.

  2. Add some reserved pasta water to loosen the sauce.

  3. Add the cooked pasta.

  4. Toss everything together until the pasta is fully coated.


6. Add the Shrimp

  1. Place the cooked shrimp on top of the pasta.

  2. Gently mix or leave them on top for presentation.


7. Garnish and Serve

Top with:

  • Grated Parmesan cheese

  • Fresh parsley

Serve immediately.
