Creamy Poblano Pasta with Shrimp (High-Protein Recipe)

Ingredients
For the Shrimp

250 g (½ lb) large shrimp, peeled and deveined

1 tbsp olive oil
-
½ tsp salt
-
½ tsp black pepper
-
½ tsp paprika
-
½ tsp garlic powder
For the Pasta
-
200 g fettuccine / linguine / spaghetti pasta
-
Water for boiling
-
½ tsp salt
For the Creamy Poblano Sauce
-
2 poblano peppers
-
3 garlic cloves
-
½ onion
-
1 tbsp olive oil
-
½ cup Greek yogurt (for a healthier creamy base)
-
¼ cup cream cheese (optional but adds richness)
-
¼ cup grated Parmesan cheese
-
½ cup reserved pasta water
-
Salt to taste
-
Black pepper to taste
For Garnish
-
Extra Parmesan cheese
-
Fresh parsley (or cilantro), chopped
Step-by-Step Directions
1. Roast the Poblano Peppers
-
Roast the poblano peppers over a gas flame, grill, or in the oven.
-
Roast until the skin becomes black and blistered.
-
Place them in a bowl and cover for 10 minutes.
-
Peel off the skin and remove the seeds.
2. Cook the Pasta
-
Bring a large pot of salted water to a boil.
-
Add pasta and cook according to package instructions (8–10 minutes).
-
Before draining, reserve ½ cup pasta water.
-
Drain the pasta and set aside.
3. Cook the Shrimp
-
Heat olive oil in a pan over medium heat.
-
Season shrimp with:
-
salt
-
black pepper
-
paprika
-
garlic powder
-
-
Cook shrimp 2–3 minutes per side until pink.

Remove from the pan and set aside.
⚠ Do not overcook the shrimp or they will become rubbery.
4. Make the Poblano Cream Sauce

Heat 1 tbsp olive oil in a pan.
-
Sauté onion and garlic for about 2–3 minutes until fragrant.

Add the roasted poblano peppers.
-
Transfer everything to a blender.
Add to the blender:
-
Greek yogurt
-
Cream cheese
-
Parmesan cheese
-
Salt and pepper
Blend until the sauce becomes smooth and creamy.
5. Combine the Pasta and Sauce

Pour the poblano sauce into a pan.
-
Add some reserved pasta water to loosen the sauce.
-
Add the cooked pasta.
-
Toss everything together until the pasta is fully coated.
6. Add the Shrimp
-
Place the cooked shrimp on top of the pasta.
-
Gently mix or leave them on top for presentation.
7. Garnish and Serve
Top with:

Grated Parmesan cheese
-
Fresh parsley
Serve immediately.
